For the ultra secret items, they are written on a board or poster and not listed on the menu. That'll be equivalent to the daily specials

What are the unusual dishes on the Chinese menu? Any dog? Monkey brains?
What about insects/grubs? I regularly watch Amazing Race and everytime they go to some Far East country one of the challenges always seems to be eating some exotic food that westerners would normally never consider trying. Can you get stuff, LIKE THAT, to eat here in Calgary?
