Well what do you like on your food to spice it up?

I've been alternating between Franks Red Xtra hot and Tabasco sauce recently but bought a bottle of Sriracha last weekend and I'm liking the flavor to that alot more

I really like the taste of Frank's Red Hot, and I also like Sriracha, but find that it can be a bit much for me.

The only way to go, I put that stuff on everything. Though if I am simply looking to spice up a chili, soup or a sauce I use a habanero extract, even a couple of drops of that stuff adds serious kick!

That's right. I'm not sure what Dave's ghost pepper is like, but if it's anything like Dave's insanity, it's mostly burn with very little flavour to it. Crossroads market on Blackfoot, a guy there has a ton of great hot sauces (many of them locally made too!). West Indian is one of my favourites. Moderate for heat at most (for the very high tolerance people...this stuff is still hundreds of times hotter than Frank's). It's VERY good on just plain white rice, any sort of chicken, and in soups/chilis. Jim Beam hot sauce is much milder, but great for any BBQish stuff you're doing.

I absolutely love Sriracha hot sauce! It goes on almost everything that I eat.

I find that if the hot sauce is so spicy that I can't even taste anything other than my mouth burning, it takes away from the flavor of the meal.

Sriracha is the perfect level of spiciness for me.

That stuff is awesome, and it is right on the threshold of deliciously hot, and to frikkin hot to eat it. Unlike you though, a bottle lasts me at least 6-8 mths.

Perfect combo of flavour and heat.

Next time you make pizza, skip the pizza sauce and put a layer of this on with some cheese and some nice cured pepperoni. Nothing finer.

Valentina hot sauce is really good on pizza, burritos etc. Not really spicy but has a great flavour.

Barbeques Galore has a pretty decent selection of hot sauce. Other things like habenero chili powder too.

Just discovered this in the fall. Pretty tame as far as hot sauces go, but I love the flavour. I put that shyte on everything lately. That and I just like saying "Cholula". Just feels right.

Depends on what it's being used for. For chicken you can't beat 1 part Frank's Red Hot/1 part butter (i.e. buffalo sauce). Tabasco as a general all purpose flavour-adder but it's not really saucy. For that you'd be looking at various Thai or Vietnamese or Szechuan sauces... there's lots around so I like to experiment with something new each time I run out.

Many restaurants make it themselves by frying chilli peppers in hot oil.

I've boughten many bottles of Dave's for the last 5 years or so. Dave's Insanity Sauce, you are right was just straight hot and no flavor. I honestly wasnt' a fan of it (except when watching my friends try it out). But the ghost chilli one has a delicious flavor to it, same with the Dave's Garlic flavor. I would say that the ghost chilli one is the best since it's got a good flavor and the hotness really creeps up on you. The Insanity bottle was just pure evil.

I avoid any hot sauce that has capsaicin listed as an ingredient - I'm after the flavour and heat of the peppers used to make the sauce, not a synthesized chemical added to simply create a burning sensation. I consider it gimmicky to boast you have a super hot product, when you essentially dumped pepper spray into a bottle, rather than cultivate or select intense, flavourful peppers for your sauce.

For anyone interested in growing their own hot peppers to make their own sauces, a great source of seeds is here: http://pepperjoe.com/

I've used some of his seeds before and they produce great peppers. They throw in some bonus seed packets in each order, so you always have something unusual to try out too.

I've spoken with that guy a couple of times, he's fantastic. That hot sauce is HOT. Even the medium is hard to take too much of at times. Great on Stoned Wheat Thin crackers!

Isn't capsaicin found in all hot peppers? I don't think you can avoid it. That is what makes the peppers hot.

When the ingredients list capsaicin it means it is an artificial capsaicin extract, they've just added the chemical to spike the hotness and not used real peppers.

It'd be like buying orange juice except instead of the ingredients listing pure orange juice it said: water, color, citric acid - even if citric acid is in all orange juice, it is not orange juice.

Me too, I had little to no luck growing here, certainly not enough of a yield to actually make any meaningful amount of sauce.

For anybody who likes Frank's Red Hot- the President's Choice Louisiana Hot Sauce is just as good; and you can buy a ~1L bottle for the same price as a small bottle of Frank's.

I pretty much only use hot sauce for wings; but this is all I use now.

Gotta say, this stuff is awesome! I found it in a Philipino Store Just behind Home Depot around Chinook. I have added it to stews and stir fry and it is good for both flavor and added spice.

Baron is one of St Lucia's largest food canning and bottling companies, and its famous yellow sauce is found on almost every hotel and restaurant table throughout the island. Made from Scotch Bonnets, its recipe includes mustard (hence the colour) and a mix of vinegar and other spices. It is fairly hot, thick and gloopy, with a taste reminiscent of "piccalilli" (due, no doubt, to that mustard). Splashed liberally over food, it is enjoyable, but easy-going: a good sauce for beginners. Baron also makes a red-coloured sauce which is reputedly somewhat hotter.

This is pretty good - not overly hot but very tasty. I often mix it in with hamburger meat for grilling on the bbq. Works great on tacos/fajitas etc as well.

Sriracha is OK, I used to put it on everything but really don't find it hot enough anymore. It still nice to have with pizza, but generally I need the high test sauce now. The Acid Rain stuff posted above is pretty decent and any sauce that (actually) has ghost pepper in it tends to be right up my alley.

Edit: Upon further review the "Acid Rain" posted above is not the one I like. The sauce I was referring to is "Acid Rain 10" which is made by the same company but way hotter.

Where do you guys find these sauces? All that I find at the local grocery store is Sriracha, and Tabasco, and they are both pretty lame

I recently found this savory delight. So buttery... A nice accoutrement to supplement the standard spirited ambrosial palate. Cheap like Borscht too. The packaging has changed slightly but still the same stuff.

I love rooster sauce, both the paste and the sauce.

I know a guy who makes hot sauce and it is freaking awesome. He dehydrates and smokes the peppers and then makes a paste. It is the hottest sauce I have had but it isn't like most smoking hot sauces that taste vinegary, it has an awesome smoky taste. It also doesn't wreck my ####### for some reason...

This post reminds me of going to the Lion's Den before games. The owner used to come around with his own home made hot sauce. Said it was being studied for it's medical usages. He was an awesome dude.

Sriracha is OK, I used to put it on everything but really don't find it hot enough anymore. It still nice to have with pizza, but generally I need the high test sauce now.

You might want to consider this recipe (http://www.food52.com/recipes/6441_fresh_sriracha_aka_home_made_rooster) but add a habanero or two to it. I made a batch tonight with a habanero and it's basically a fresher, hotter sriracha sauce. I also made a green batch with a mix of jalapenos, serranos and habaneros, and it's excellent as well.

The only adjustment that I make is to simmer for closer to 10 minutes, because it can be a little strong on the vinegar if you follow the recipe exactly.

Big bump here, but I just went to Mucho Burrito and asked the 'artist' to put some hot sauce and jalapenos on my burrito (he basically covered the burrito with sauce and peppers). I got home and took about six bites and realized that my face was on fire. Literally. They must have put on ghost sauce or some other insane formula. My tongue, upper lip, half my bottom lip and a portion of my thumb are still burning 15 minutes later. I poured my son's chocolate milk in my mouth and kept at it until the pain was half gone. I am in serious trouble when I hit the crapper.

Does anyone seriously enjoy the extreme sauces?

I'm pretty sure they got rid of the Ghost pepper sauce (as it was limited time I thought). I had it when they had it and it was fairly hot. Wouldn't eat it again, couldn't enjoy the burrito.

Oh no, they did have it behind the counter (for the artist to use). I thought he didn't grab it though, who knows. I have proven I cannot eat ultra spicy foods. And I like spicy foods, I was ready to chug vodka so that I could pass out because I was barely managing the burning.

They stopped selling the ghost pepper burrito (with ghost pepper rice and beans) but they still have the ghost pepper hot sauce. I bought a bottle of this stuff because i had a coupon and it's the hottest hot sauce i've ever tasted. so good though

Anyone ever had Tiger Sauce? I had some in Maui on a fish taco and brought a bottle back with me. It's a sweet/mildly spicy sauce and unlike anything I've ever had before. So delicious.

Superstore has a new "hot sauce", its delicious. Its called Chipotle hot sauce or something, its the PC brand. Keep in mind this stuff has about as much heat as tabasaco so don't expect the heat to be the fun part.......its the flavour.

I also have been looking for a particular hot sauce set, I believe it to be mexican. It comes in a 3-pack ... a red, brown and green hot sauce, the brown one is super hot does anyone recognize this description.
