Has anyone ever infused their own vodka or rum before?
I was thinking of trying out some chili pepper vodka for caesars, but I'm not too sure which pepper to use. Right now I'm leaning towards either serrano pepper or jalapeno, but if anyone has done it before maybe you have something that worked better?
Also the fiance likes cherry vodka so I might give that a shot, any tips on liquor to cherry ratio?
I'm a rum drinker, but can't really think of any reason to infuse rum, has anyone done anything with rum before?

I would probably be more inclined to use jalapeno over a serrano. Serrano's are more fiery, and while I've never tried a pepper infused vodka, I've tried serrano beer before, and the spice was a little bit off-putting. It wasn't too spicy or anything, it was just a little "weird". I'm sure dried chili's would work too. I'm quite fond of chili de arbol. Thai bird chilis would probably give a nice flavour too.
For the rum, you could infuse it with some vanilla beans. Home-made spiced rum. Or maybe some dehydrated coconut to make your own malibu.

My brother does this with vodka and peppercorns. He loves it. Dumps a bunch of peppercorns in a bottle of it for a couple weeks, pours it through coffee filter after and makes ceasers. Sounds pretty tasty actually.

I did bacon infused Jack Daniel's last year. It was decent, but way too subtle to be worth the effort.

I've been doing a vanilla-infused vodka for about a year now, which is dangerously good. Cut a vanilla bean lengthwise, scrape the seeds from the shell to get the most flavour, put the bean, seeds and vodka into a jar for a week, stir it once a day and strain it back into the bottle. Mix with some coke if you're a vanilla coke fan.
I suppose that'd work with rum too, but why bother?

I was hoping someone would call me on that!
That being said, IMHO infusing Lagavulin with horse piss could only improve the flavor. That stuff is absolutely undrinkable. Might as well just eat a couple chunks of peat and then wash it down with fumes from a tire fire.

On a quick side note, I like an occasional Black Russian (vodka and kahlua). Friend of mine who is a bartender made one for me with vanilla vodka (and kahlua). Quick nice actually!

I would use a poblano.
Not nearly as spicy, much better and distinctive 'peppery' flavour.

Poblanos are definitely tasty. I find they're hit/miss whether stores have them in stock. Superstore is mostly likely to have them I find.

I make the lemoncello with the peels and make sangria with the leftover lemons. Also, including one orange's worth of peel gives the Lemoncello and even stronger flavour. That orange also goes in the Sangria.

Everything.
A Caesar would work well with bacon vodka. Whenever I go to Vegas I stop at Hash-house-a-go-go for the bacon/lettuce/tomato bloody mary. There's really nothing that bacon doesn't go with.
Speaking of liquor, I think I'm going to infuse myself with some scotch...

Second side note...adding a shot of baileys to a Black Russian(called a mud slide) is dangerously good. Sweet, but good. To make it a little less sweet just make it 1 part vodka, 1/2 part kahlua, 1/2 part baileys.

I'm just curious if anyone threw cinnemon sticks into Vodka and if it turned out? I've heard of infusing before, but never thought about it until this thread came up.

I made bacon infused bourbon one time.
mixed it with a bit of maple syrup and carbonated water.
Also made greendragon with everclear, which is great
